Brewing Note: For the best cup, use freshly drawn water brought to a full boil. Measure approximately one heaped teaspoon of leaf per cup — or a generous teaspoon if you prefer your breakfast tea with real strength. Steep for three to four minutes and then pour, removing the leaves promptly to keep the flavour clean and bright. Milk added after pouring gives you the most control over the final colour and strength. This is not a tea for multiple infusions in the way a fine oolong might be, but a second short steep — perhaps two minutes — will still give a decent lighter cup if you want to make the most of the leaf.
