Brewing Note: St Pauls is a robust blend that rewards a proper brew. Use freshly boiled water at 100°C and allow the leaves to steep for 3 to 4 minutes — enough to draw out the full malt and body without any bitterness creeping in. A heaped teaspoon per cup is ideal; if you like your tea on the stronger side, add a little more leaf rather than steeping longer. Milk softens and rounds the blend beautifully, and the bergamot note holds its own right through to the last sip. For the best first cup of the morning, warm your pot before brewing — it makes more difference than most people expect.
